Bringing happiness with food and friendship

Rita Salway of Scottsbluff had little interest in cooking when she was growing up. But she eventually developed a passion for cooking, and she’s spent the last 15 years serving up tasty meals for residents at Wel-Life, an assisted living residence in Scottsbluff, as the dietary manager. Her goal, however, isn’t just to provide residents with a tasty meal three times a day. She wants them to be happy – both when they’re eating and when they’re not eating.

As a little girl, Rita (Moreno) Salway had no desire to learn how to cook.

She did, however, enjoy watching her grandma make delicious meals.

“I loved my grandma’s cooking, especially her Mexican food,” Salway said. “She was a great cook, so it was fun to watch her. She made everything from scratch, like tortillas, beans, rice, and tacos. It was so good.”

As Salway grew older, she still had little interest in cooking. Even when she and her husband, Tony, got married in 1999 – she was about 23 years old – she was content to cook simple things.

“I was a horrible cook back then,” Salway, who’s 45 now, said with a laugh. “My husband and I had to teach ourselves to cook. Our first few years together, it seemed like we were always making Hamburger Helper.”
