SCOTTSBLUFF – If you drive around Scottsbluff or Gering early on a weekday morning, chances are you’ve seen it: a white food truck with its side panels opened wide, coolers stocked, griddles sizzling, and customers waiting patiently for their favorite breakfast burritos, tacos, nachos, and quesadillas. Workers step outside on their break, wave as the truck pulls up, and gather around in the crisp Nebraska air.
And before a single order is taken, the ritual begins.
At Inland Truck Parts, a voice comes booming over the intercom system each time the truck arrives: “Burrito time!”
Inside shops and offices across the valley, customers say the same thing. Others simply smile when they see the familiar truck pull in because they know the morning just got better.
This is Burrito Time — a family-built, community-driven food operation that has become a staple of local mornings for nearly a decade.
But the story doesn’t begin with a food truck. It begins with a mother following her instincts, a daughter learning the value of hard work, a community that embraced them, and a trunk full of burritos.
Adela Casillas, owner of Burrito Time, once ran a small storefront restaurant back in 2014. It was a promising but demanding venture.
“She used to have a storefront back in 2014,” her daughter Brissa recalled. “But it was kind of a lot at the moment. She closed it down in August of 2015.”
