FEATURE: Finding a passion for roasting and selling coffee

Isaac and Lacey Holbrook, owners of I&L Coffee Roasters in Mitchell, had no intention of running a coffee shop after they graduated from Mitchell High School in 2014. They both attended a Bible college in Wisconsin and planned to do missionary work afterward. However,  they discovered a love for fresh roasted coffee, and after college, they ended up moving back to Mitchell, where they started selling roasted coffee and later opened their own coffee shop. They recently celebrated their two-year anniversary of running a successful business, but all the credit for the business’ success, they say, goes to God.

MITCHELL – Isaac Holbrook started drinking coffee occasionally when he was 16 years old, but his consumption of it went up considerably his senior year at Mitchell High School, when he got a part-time job delivering pizzas.

“Some nights I would work until midnight or 1 a.m., so I wasn’t getting a lot of sleep,” he said. “So, I drank coffee to help me stay awake at school.”

At that time, Holbrook wasn’t too particular about the type of coffee he drank, mostly because he didn’t understand all the factors involved in making “good” coffee, including the roasting process.

“A lot of people don’t think about the coffee they drink,” he said. “That’s how I used to be.”
