Since 2004, Jax Gourmet Coffee and Snow has been serving Scottsbluff with delicious gourmet coffee and snow cones, making it the longest continuously operating coffee business in town. Owned by Mark and Paul Harris, Jax has become a local staple, offering espresso-based drinks, more than 75 snow cone flavors – including their famous gourmet dill pickle snow cone – and fresh-baked scones every morning.
The business thrives on its popular items like the caramel latte, caramel apple snow cone, and the unique root beer max. With 90 percent of its sales coming through the drive-thru window, Jax caters primarily to the morning coffee crowd and serves as a popular stop for school buses after games.
A key part of Jax’s success has been its commitment to community involvement. Co-managers Erik Harris, involved since the beginning, and Bella Groskopf help run the business, which also prides itself on hiring young employees – often providing them with their first job and essential training.
Before launching Jax, Mark and Paul Harris spent 50 years in construction and remodeling with A&L Inc. They moved to Bayard in 1970 and settled in Scottsbluff in 1978, where they have been active community members. Mark, now in his mid-60s, serves as a county commissioner and volunteers for various local boards. Outside of work, he enjoys spending time with family, especially his grandchildren, as well as hunting, fishing, and golfing.
Reflecting on 20 years in business, Mark Harris said, “We feel blessed to still be here after the first few years. Our customers are the reason we’re here – they keep the doors open and the bills paid. Every interaction is a chance to connect, and we’re grateful for that.”
