SIDNEY — On a weekday morning in Sidney, the Silver Dollar Bar and Grill doesn’t feel like a place trying to reinvent itself. It feels like a place trying to remain itself — steady, familiar, and ready for the next rush that always seems to arrive right on time.
“Consistency of the good product being put out,” owner Tim Backer said, when asked what has kept the place relevant for decades.
That word — consistency — comes up often when Tim and Katlynne Mikkelson talk about why the Silver Dollar matters to locals, why it’s endured, and why, when they took over the business, their instinct wasn’t to overhaul it. It was to respect what it already was.
“Everybody asks us, like, ‘What are you going to change? What are you going to do?” Katlynne said. “It’s like, ‘We’re not going to do much of anything.’”
