Linda Rodriguez grew up in Denver learning how to make tasty and cool-looking cakes and other desserts from her mother, a talented baker, and Linda’s dream was to someday open her own Mexican bakery. That dream was shared by her husband, Claudio Carmona, who also lived in Denver and spent years making a variety of delicious Mexican bread. After they got married in 2012, they opened their own Mexican bakery in Denver and operated that successfully for five years. However, due to circumstances beyond their control, they had to look for a new place to run their business. Instead of opening another bakery in Denver, though, they wanted to get away from the expensive and heavily populated area of Denver, so they decided to take a big leap of faith – move their family and their business to Scottsbluff. They ended up opening Lizcake four years ago on East Overland, and they couldn’t be happier now, for their Mexican bakery has continued to grow in popularity, and earlier this year they even added a restaurant to their business.

SCOTTSBLUFF – Growing up, Linda Rodriguez loved every chance she got to spend time in the kitchen baking with her mom, Liz Flores.
Her mom, Linda said, is a talented baker who learned how to make Mexican treats at an early age. Her mom even started working at a well known bakery in Mexico when she was 16.
“The owners saw she was talented at baking, so they told her, ‘You should keep learning so you can do this when you grow up,’” Linda said. “My mom continued to make cakes and all sorts of other Mexican desserts after that, and she got really, really good at it. On a scale of 1 to 100, I’d give her a 100.”
