Off to a superb start

Anthony and Sierra Parra opened Luna Bean Coffee House in Scottsbluff in May, and since then, their business has continued to grow in popularity – both because of the comfortable, cool-looking atmosphere they’ve created and also because of the variety of delicious drinks and food items on the menu. The Parras say they’re having a blast being local business owners together, and they’re also excited to use their coffee business as a way to help support church missions both locally and abroad.

SCOTTSBLUFF – Not long after Anthony Parra graduated from Scottsbluff High School in 2014, he became the owner and manager of Route 26 Mart convenience store in Scottsbluff and the adjoining sub shop, which he named Pranzi Deli.

Although he was excited to operate the two businesses, he and his parents, Antonio and Nellie Parra, who own Ole Restaurant in Scottsbluff, had talked about possibly turning the sub shop into a coffee shop.

“We thought it would be a great idea, especially since we’re on the east side of town, close to WNCC and a lot of hotels,” Anthony said. “We got in touch with some family members and friends who had operated coffee shops in the past, so we had all the information we needed to push forward with it.”

Anthony, however, was reluctant at that time to turn Pranzi Deli into a coffee shop.

“I just didn’t think I was old enough or mature enough yet to take on that responsibility and do it effectively,” he said. “I thought I needed a little more time. So, the coffee shop idea kind of got put on the back burner for a long time.”

His interest in opening a coffee shop, however, never waned, and it became a much more serious idea after he and Sierra (Ray) Parra got married in April 2018.
